Recipe Idea
Lamb Stew with Sweet Potatoes (Total Time: 30 min)
Olive oil
1 large or 2 small onions, diced
1 medium red bell pepper, seeded and chopped
2 sticks celery, chopped
1 green chili (Serrano or other), seeded and finely chopped
2 pounds lamb
2 teaspoons freshly grated ginger
2 teaspoons diced garlic
6 teaspoons Curry Spice (hot or mild)
Salt to taste
2 sweet potatoes, peeled and cubed
Juice of 1 lemon or lime
Few sprigs cilantro or parsley
Heat olive oil over medium heat then add onion, bell pepper, celery, and green pepper. Sauté until translucent. Add meat and sauté until slightly browned, then add ginger and garlic. Add spice blend, salt, and sweet potatoes and cook until sweet potatoes are soft and the meat is done (about 15 to 20 minutes). Add the lemon or lime juice. Garnish with chopped parsley or cilantro.
